The fusion of various food forms has been relatively new. The 1970s saw the fusion of Asian and European foods, thanks to Wolfgang Puck’s culinary skill in both areas and his imagination with the creation of this “east meets west” food combination.
The fusion foods movement allows culinary artists to be innovative trying new ways to mix and match various ingredients and food until they create the perfection concoction.
However, some have labeled this movement the “fusion confusion,” marking that some ingredients just don’t have any business mixing with others. There is also the aspect of westernizing the eastern food that makes a few question whether this is just another method in which the West is taking over.
Although I certainly do treasure the authenticity and traditional aspects of my Vietnamese meals, a change in element isn’t all that bad in my opinion. If fused well, the blend can be exciting to the taste buds and inspiring to home cooked meals as well! I’m sure I’m not alone with this idea either because fusion restaurants have been opening up right and left, many just within the last decade. And in the land where the American melting pot (or salad bowl) signifies the bringing together of many cultures, I believe this is just another result of that. What excites me personally is being able to (somewhat) master both Vietnamese and American styles of cooking, combine what I like best, and create something with a twist or completely new. The possibilities seem endless!
Haven’t had a taste of fusion? Here are a few of my favorite fusion restaurants in the SF Bay Area.
1. Ana Mandara – SF
The service and the atmosphere is excellent. Chef Khai is the owner of this restaurant (and is an advisor for OVN), but that doesn’t change the fact that this place is delicious! It’s a bit on the pricey side, but if money permits, check out the Lobster Ravioli and the Duck with Roasted Pine Nuts!
2. Xyclo – Oakland
The parking is a little difficult, but beyond that, this place is amazing (and it’s fair on your wallets). I personally enjoyed the Nem Nuong Roll, Vietnamese Carpaccio, and the Chili Wings. And if you’re in the mood for dessert, try the Fried Banana and Coconut Ice Cream. Fenton’s is also across the street, so you can definitely walk around Piedmont!
3. Vanessa’s Bistro – Berkeley
Solano is a small cute patch of hip stores, totally Berkeley-esque. My faves were the Garlic Green Beans & Tofu, Crispy Sol Tacos, and Duck with Mashed Potatoes.
Also, check out Chef Khai’s Stripe Bass Ceviche. Yum!
